Kyoto original rice “Iwai” 80% polished Junmai
in 1991, “Iwai”, the first pesticide-free rice grown in Kyoto, was revived in Fushimi, Kyoto. Rice was kept at a low-polishing rate since its pesticides-free. By brewing it slowly at a low temperature with low-polish rate, the Sake always tastes refreshing and smooth no matter if you served it warm, chilled, or at room temperature.
